A spoon of the nutty, warm, caramelised bananas with some cold, sharp Greek yoghurt, all brought together by the sandy texture of milled seeds. What a blissful mouthful.
When you are craving a proper dessert after a home cooked meal, this recipe satisfy those cravings immediately with ingredients you can grab off your cupboard and fridge. It was this exact scenario that led me to making this dessert. The results were so stunning I just had to share.
It tastes a bit like a deconstructed banoffee pie, and a very good one at that.
It is such a simple recipe, it feels wrong to call it one. Nonetheless, this beauty is definitely worth a try. Here's how you make it:
Ingredients
1 banana
2 knobs salted butter
1 tsp cinnamon
2 tbsp milled seeds (mix of chia, flax, and sunflower)
1 tbsp natural Greek yoghurt
Method
Melt the salted butter in a small non-stick pan in high heat as you slice your banana length-wise and then width-wise.
Add the banana slices face down to the pan for 30 seconds or until you can smell it caramelising and see the sides starting to cook and turn translucent.
Sprinkle cinnamon evenly onto of the banana slices and flip them so they cook on the other side.
Grab a plate, sprinkle milled seeds on top - you can also use oatmeal, granola, or whatever cereal or nut mix you have in your cupboard.
Place the caramelised banana slices on top of the seeds, drizzle over the brown and spiced butter, and top with a dollop of unsweetened, natural Greek yoghurt.
This dessert has no added sugars, and if you're using oatmeal or milled seeds, the dessert will be full of fibres and minerals. Greek yoghurt is also a great source of protein, and the caramelised bananas are just...fabulous.
